Honeyed Halloumi, Spring Greens & Fried Egg Buns

Not your average breakfast, for something a little extra on the weekend. Sticky caramelised halloumi with a little spice from chilli flakes & the addition of pickles for a tangy bite. 

Takes 30 minutes 

Makes 2 Rolls 

INGREDIENTS

  • 2 brioche buns or rolls of choice, cut in half
  • 2 free-range eggs
  • 1 block of halloumi, sliced into 6
  • 2 tbsp of Black Bee honey
  • 1 tsp chilli flakes
  • 0.5 tsp oregano
  • 1 bunch of spring greens, washed & roughly chopped
  • 1 garlic clove, thinly sliced
  • 4 tbsp of pickled onions or preferred jarred pickles 
  • Salted butter for spreading
  • Olive oil for cooking
  • Flaked sea salt
  • Few grinds of black pepper

METHOD

Place a frying pan on a medium heat, add a glug of olive oil, then the sliced garlic & greens, season well with salt & pepper. Stir every so often as they start to sizzle. Whilst the greens are cooking, place  another frying pan on the heat.

If you like your bread toasted, place the cut buns in the pan for 1 minute till golden then place to one side. Add a glug of olive oil to the hot pan and then the sliced halloumi, leave to golden on one side, 3-4 minutes, once golden flip over each slice, then add the honey, chilli & oregano, turn down to a gentle heat.

Whilst this is gently bubbling away, remove the cooked greens from the other pan. Place the pan back on the heat and add another glug of oil then crack in both eggs. 

Once your eggs are cooked & the halloumi is golden all over, build your breakfast buns. Butter each side of the bun, then layer on the greens, halloumi, egg & top with pickles, sprinkle with a little extra sea salt & black pepper. Serve straight away!
